What I thought might be interesting was to list and compare the word counts of different versions of the bible. Another might to find the oldest texts in existence and compare the word count of different key words the the frequencies (Lord, Sin, Love).

I think you would have to stick to English translations for this and perhaps make translation the subject of your study. Note, however, that early version of the Bible do not use modern spellings, so, if you want “sin” and “sinne” to be counted together, you will have to normalise the spellings.
